Grinding
Techniques
Learn the appropriate ground sizes for filter drip,
espresso and french plunger pot.
For filter drip coffee grind beans like fine sand
but not powdery (it's best to rub coffee between fingers
to feel the grind size). The fineness of the grind should
allow the brewing water in the filter to come through a
bit more slowly, so that the filter is about 2/3 full
with water during most of the brewing process. Victor
Allen recommends grinding a little coarser for decafs and
darker roast coffees.
For a typical espresso coffee machine grind beans
halfway between very fine sand and powder. The grounds
must resist the flow of water to make a rich cup of
coffee, but they must not totally obstruct the flow of
water. A delay of about two to three seconds between the
time you start the espresso pump and the time coffee
streams into the cup, as well as a rich, thick golden
foam color on the coffee going into the cup, is an
indication of the proper grind. It should take about 10
to 20 seconds to brew a standard espresso serving.
For a French press plunger pot Victor Allen
recommends the same grind used for filter drip coffee.
After several minutes of letting the coffee brew, it is
necessary to stir the grounds briefly before depressing
the plunger. (it encourages the grounds to sink to the
bottom, making depressing the plunger much easier)
VIctor Allen says, "Get a grinder", it's
important to grind your own beans to ensure that your
coffee is as tasty as can be!

Coffee to water ratio
For a 2.2 liter airpot, Victor Allen's uses 4 oz. of
coffee. Victor Allen's rule of thumb: "Use 2
slightly heaped Tbls. (11g) of coffee per 8 oz. (250cc)
of water."

Because Victor Allen's uses the Mitsubishi Ageless
oxygen absorber system in each bag, the bags can last as
long as 6 months (unopened), but become perishable once
opened. After opening, use beans within one month. If
ground, use within one week.
